The Moo Bar was created at Sweetness and Light and has been a Ferndale favorite for decades. It's a big, old-fashioned candy bar made with buttery caramel, freshly roasted almonds, homemade vanilla marshmallow, and Guittard chocolate.

We start by cooking sugar, butter, local cream, and glucose in a copper kettle. The finished caramel is poured onto our marble slab to cool, then topped with almonds that we roast ourselves. Next comes a batch of vanilla marshmallow made from scratch and spread over the almonds.

The whole thing rests overnight before we cut it into individual bars by hand. Each Moo Bar is then dipped in either Guittard milk or dark chocolate, wrapped in foil, and labeled one at a time.

It's a lot of work for one candy bar. We wouldn't make it any other way.
